JERRY'S FISH CHOWDER

INGREDIENTS

Fish - 6 to 10 hand size boneless fillets cut into 1/2" to 1" chunks

Minced clams - 1 - 6 1/2 oz. can

Creamed corn - 1 small can

Mushroom soup - 1 can condensed

Half & Half - 1 pint

Bacon - 4 to 6 slices cut into 1/4" pieces

Potatoes - 4 medium diced in to 1/2" cubes

Onion - 1 medium diced

Carrots - 2 grated

Salt & Pepper - 3/4 teaspoon each

Tabasco sauce - to your taste

Butter - 1\4 stick

Note: Shrimp, oysters, scallops and/or crab may be added.

 

PROCEDURE

1- Use 6 to 8 quart pot

2 - Cook potatoes, carrots & onions in microwave on high for 10-12 mins.

3 - Fry bacon in pot until crisp. Drain on paper paper towel. Drain & dispose of grease.

4 - Add clams & clam juice plus 1 can of water & bring to boil.

5 - Add fish. Cook and stir gently until done. (don't over cook)

6 - Add the remainder of ingredients.

7 - Blend ingredients, cover and simmer for 1/2 to 1 hr. Stir often. DO NOT BOIL.
